OMG! SWEET mini PANCAKES!

 

Here are tips and secrets for fabulous sweet mini pancakes.

And the recipe, of course!

I know there are thousands pancake recipes around, but this one is the easiest and the best recipe for cute sweet mini pancakes!

You can do it on a Sunday for breakfast! It’s a success! So, here we go:

Take:whisk

  • 1 egg
  • 1 tbs butter (melted)
  • 3/4 cup of milk
  • 1 cup of all purpose flour
  • 3/4 cup brown sugar
  • 1 ts baking powder
  • 1 ts salt

*  Optionally you can add 1 ts vanilla extract 

* You can also use white sugar if you don’t have the brown one. Or mix them both. 

Put together the dry ingredients. Flour, sugar, baking powder and salt.

Then, in another bowl,  whisk the egg well and add the milk and the butter (and vanilla extract if you want to).

Tip 1: You can melt the butter already in the pan where you will fry the pancakes. Then you don’t need to add more butter afterwards. Do it with your lowest heat and turn it off as soon as the butter melts. Don’t let it boil.

Then, slowly add the liquid mixture to the dry mixture whisking it well.

* This is the consistence you should get.

Now the frying part. It is the trickiest one. You need the perfect temperature!

And here is the secret: the temperature can either make them fabulous or crappy! If it’s too hot it’s not gonna grow and it may burn. If it’s not hot enough it’s gonna be kinda jelly. We want them to grow fluffy and toast a little on the outside! On the electric pan I set it for 120°C. But it’s really hard to know because the heat is neither precise nor stable. You are gonna have to make a few attempts to find the right temperature.

So, here is the tip 2: wait for the bubbles to burst.

Add a spoon of dough to the pan and let it fry until the bubbles burst.

Then, turn them with a spatula. And let them fry a little longer…

*  As you can see, the heat of my pan is a little uneven.

Tip 3: Add a little butter when they are still warm!

Tip 4: Since they are very sweet, they also fit well with salty creams, like cottage or cream cheese, instead of jams.

Ah, and they are perfect with coffee!!

P.S. Adding some blueberries to the dough, before frying it, will make the pancakes incredible! The blueberries melt and it seems that the pancakes are filled with jam!
